Today was my birthday!! And these were my gifts...haha I thought the best way to capture today was all the gifts...Melanie walked in on me as I was attempting to do it on my own, lol, Thanks melanie for the great work you did that night...your the best adoptive sister a girl could ask for!

Tonight was also the night we all survived a 3.5 hr sushi dinner, lol. THANK YOU everyone for coming it means more than you all could have known!!!!!!!
I had the best birthday...it was a little woozzy at the end but I sure did have a good time :)

So, as I mentioned on the post from the 25th, it is my birthday this weekend...in fact tomorrow, but yesterday was my sisters bday! So my parents took us to a great spaghetti restaurant by my house known as Vinces!! The food is great by the way!!

DEAL OF THE DAY!!
I needed sheets for my new bed I got at the end of December...I have been sleeping on one twin sheet wah....wah...not good! So I finally found sheets on sale at Target 12.49 marked down from 49.99!!! made my day and had me thanking the Lord for his small blessings! He blesses me and takes care of me and always when I least expect it :)

Today I made a good ol' chinese food take out dish...sweet and sour pork!!!! I was so proud of course I had to snap a pic of it!!!
Here is the recipe!!
Homemade takeout: sweet and sour pork!
About 3 pork chops cut into chunks. Or Pork belly if thats available!
1 can of sweet crushed pineapple in juice
3 red bell peppers deseeded and cut into bit sized chunks
1 whole onion chopped into bite sized pices
3 table spoons of ketchup
1/4 cup of white sugar
1 tsp. of white wine vinegar
4 tbs. corn starch
1 egg white
3/4 c. water
1 table soon of EVOO (extra virgin olive oil)
Corn starch paste:
3 table spoons of corn starch and 2 table spoons water. (add more water if necessary)
Pork:
1st add the egg white and two tbs. of corn starch to the pork pieces and mix in a bowl. And set aside in the fridge.
Sweet ad sour sauce:
In a sauce pan, on med. heat, add the can of crushed pineapple, 3 chopped bell pepper, 1 chopped onion, 3 tbs. of ketchup, 1/4 cup white sugar, 1 tsp. of white wine vinegar, 3/4 c. water. Bring all ingredients to a boil. Once boiling add the corn starch paste to thicken the sauce.
While the sauce is working together fry the pork in a large pan. Once the prok is cooked and the sauce has come to a boil add the sauce to the cooked pork and mix together on low heat and serve!!!
Super easy and super tasty!!!
P.S.
Add a pepper to the dish for a nice addition of spice!!!
