the first time I ever made beef pho! Its vietnamese noodle soup which is the best cure after a long long night :)
So yummy and like I have said before since I love food I would love to share with you the recipe :)
Beef Pho:
Beef bones (as many as you can get your hands on..the more the better!!)
1 large onion
6 cloves of garlic peeled
3 star of anises
1/4 cup of fish sauce
black and white pepper to taste
hoisin sauce to taste
a few green onions
cilantro
lemon
2 packages of pho noodles
Stock:
1. Just bring a large pot of water to boil
2. Once the water is boiling add the beef bones and large onion quartered, 6 cloves of garlic, 3 star of anises, and the fish sauce.
3. Soak the pho noodles in a large bowl in ice cold water till the broth is ready!
4.Let boil again for 20 mins then simmer for about an hour.
5. Once the broth is ready prepare noodles as according to package and then garnish with chopped green onion, cilantro, lemon, and fish sauce and hoisin sauce to taste.

I know its only day 9 but this is one of my favorite pictures thus far. It is a picture of my 3 yr old niece.
The story is we were eating dinner at an italian restaurant, we of course had leftovers, so as I poured the gobs of spaghetti into the container I added hot pepper flakes to top it off. While I was doing so my little niece had her head directly over the box and the pepper flakes caused a tickle in her nose and mine and I could not stop laughing as her nose started to run and she kept sneezing to get the tickle out....and this picture is the final product of the situation.

This is a picture of my gas tank...the lowest its ever been and I pray its the last time. I drove 20 miles after i took this picture...and prayed every minute of the drive to the gas station!! Thank you Jesus!!
p.s. I don't live that far from a gas station it was just late after work and I wanted to drive as close to my final destination in a safer area

My dad took me out to this adorable little diner when he came to visit. I have never been there but when we walked in I just knew from the ambiance this place was going to be a winner! I ordered the sausage and egg with biscuts and gravy. It came with hashbrowns as well...they are just hidding under the tasty gravy MmmmMmm. This was the best part of my day, hahaha, so it is day 5 of 365 :)
*I love food so i can't help that I'll want to remember some dishes while on my photo journey of 2010

Ok so I LOOOVVVEEEE to cook so I just had to put this one in...this was the best pork fried rice I have ever made!! It made it into 365 because I will want to remember this, hahaha.
I'm posting the recipe in case anyone out there would like to try this tasty quick homemade take-out dish!
Quick and snappy Pork Fried Rice:
1 small pot of white rice about 4 cups cooked and cooled
3 pork chops (chopped into bite sized pieces)
3 large eggs
2 green onions (chopped into bite sized pieces)
1 medium sized white onion (chopped into bite sized pieces)
1 large tomato (chopped into bite sized pieces)
2 cloves of garlic
2 tbsp of fish sauce (can buy at most specialty stores and some common grocery stores)
5 tbsp of good tasty soy sauce
salt and pepper to taste
Step 1:
First you want chop your onion into bite sized pieces and mince the garlic. Once that is done you can move onto chopping everything else into bite sized pieces. I like to chop everything first, because fried rice is really about just adding as you go and whatever you have on hand!
Step 2:
Heat a large frying pan with EVOO (extra virgin olive oil) then once heated add your pork, or meat of choice. While the meat cooks take your eggs and whip them in a bowl like you would if you were making scrambled eggs. Once the meat looks almost cooked about 2 min. add the chopped white onion and garlic. When its all cooked remove it from the pan and set aside. Keep the fire going on the pan and add the egg. Proceed to scramble the eggs like you would on a sunday morning :)
Step 3:
Once the eggs are scrambled add the pork back to the stove and add the remaining ingrediants: tomatoes, rice, fish sauce, and soy sauce, salt and pepper. Fry it all together for about five minutes or so to heat the rice. And taaadaaaaa Fried rice!!!!
Step 4:
ENJOY!!!

The begining
Hello...
So, this is quite out of the norm for me...since I was never able to keep a journal and blogging is the new journal. But as I hear, "there is a first time for everything!".
I have decided to create this blog to help me keep up my new years resolution, while supplying the rest of you with a small piece of entertainment or time killing.
To explain better my new years resolution for 2010 is to take a picture everyday of something I want to remember or that I found interesting; and thus the title of the blog. Once the year is done I'll be creating an album of my 2010! I have already started but for the first time since I began this little journey, I almost forgot to take my picture for today...not good since its only day 10! So I have decided to start this blog, to keep me accountable to this new years resolution. I'll snap and share!
So, everyday I will continue to take my 'picture of the day', and every night or chance I get, I will post each one here for your viewing pleasure!
Here's to 2010!
